Interesting comparison you make of two great cities, I think that Singapore is better than HK for food, because of its great hawker stalls and its focus on fusion cuisine. 

But for shopping, I think HK is better for Asian tastes in terms of fashion. Some Singaporeans dresses American, although some do dress Asian style. I am surprised that u didn’t mention mong kok for shopping; there is a huge variety of clothes design and the clothes there are very cheap. Bargains can be seen for cameras in Mong Kok. As someone kind of from HK, I can tell u that u are right not to buy electronics from tsim sha tsui, but in mong kok, there are many camera shops that are v crowded with chinese locals, this means that they are selling reliable and good quality cameras. 

I love the way Singapore has more older buildings, many outdoor restaurants and is so green and clean and better quality housing estates. But HK has more soul and character in the streets, especially Mong Kok and wanchai. 

My advice is stay away from central and tsim sha tsui for shopping and stick with Mong Kok and causeway bay. 

Singapore is better for relaxing outdoor bars, but HKs is way better for clubbing, I recommend see not only LAN Kwai Fong, but also check out clubs in Kowloon because Kowloon clubs have more of a Chinese hk atmosphere, where as lan kwau fong is to western. LKF could be any where in the world; where as Kowloon by night is uniquely hk. 

Best thing about HK is that u can be in the heart of a buzzing city and within 30 mins can be relazing on a stunning beach on a beautiful tropical island.
